Cantharellus cibarius

life science Maturity 5-7 Next article →

The golden chanterelle is a famous mushroom.

Its name is Cantharellus cibarius. This name comes from Latin words. One word means "chanterelle." The other word means "culinary." This tells us it is good for cooking. People often call it a girolle. It is a choice edible mushroom. This means people think it tastes very good. Many people enjoy finding them in the wild.

This mushroom has a very distinct look. The body is both wide and tall. Its color is usually yellow or dark yellow. You might notice a faint smell. It can smell like apricots.

If the cap gets damaged, red spots appear. You can also see a yellowish spore print. A spore print is the color left by tiny seeds. These features make it easy to find in nature. However, you must be very careful. It looks like the poisonous eastern jack-o'lantern. It also looks like the false chanterelle.

Scientists once thought all golden chanterelles were the same. They used to group all North American ones together. Now they use DNA analysis to study them. This is a way to look at tiny parts of life. This work showed they are a group of related species. This is called a species complex. Now we know the true Cantharellus cibarius lives in Europe.

Other species were found later. C. formosus was identified in 1997. C. cascadensis was found in 2003. C. californicus was found in 2008. C. anzutake was found in 2018 in Japan and Korea.

In Europe, these mushrooms grow in many places. They grow from Scandinavia to the Mediterranean Basin. They live in deciduous and coniferous forests. This means they grow near many types of trees. Most people harvest them from late summer to late fall. They are often found between June and December.

You can use them in many different dishes. Some mushrooms might be watery. Watery mushrooms can rot more easily. You can preserve them by freezing them. You can also dry them to save them.

When you dry mushrooms, you must be careful. Do not use an oven to dry them. An oven can make the mushroom taste bitter. This would change the nice apricot flavor. Drying or freezing keeps them safe to eat later. It is a way to enjoy them all year. Many people love the taste of these golden fungi. They are a special part of the forest.
