It has a long, serpent-like body that looks like a mix between an eel and a catfish. You can easily spot one because of a single barbel on its chin. A barbel is just a small, fleshy whisker. This name comes from the Latin word "barba," which means beard.

Even though they look smooth, they actually have tiny scales that are nearly microscopic. This fish is the only member of its group called the genus Lota. It is also the only freshwater fish in its entire order, known as Gadiformes.

These fish spend most of their lives near the bottom of the water. This is called a benthic lifestyle. Because their fins are small, they are not great at swimming in fast currents. Instead, they like to hide in mud, sand, or rocks.

To stay safe, adult burbot build long burrows in the ground for shelter during the day. They are also crepuscular hunters. This means they are most active during the twilight hours of dawn and dusk. They use their wide mouths and many small teeth to catch prey. They eat many things, including other fish, frogs, and even birds.

Burbot live in many cold places around the world. They live in the subarctic regions of the Northern Hemisphere.

Their homes stretch from France across Europe and through Russian Asia to the Bering Strait. In North America, they live from Alaska all the way to New Brunswick. They are very common in the Great Lakes, including Lake Erie. Some populations even live in the brackish water of the Baltic Sea. In the United Kingdom, the burbot might be extinct. The last one caught there was a specimen found in July 1970 by Stephen Mackinder.

Life for a burbot happens in the freezing cold. Most freshwater fish spawn in the spring, but burbot spawn in mid to late winter.

They often lay their eggs under the ice in water that is only 1 to 4 degrees Celsius. During this time, males and females gather in a group called a spawning ball. The females can release a huge number of eggs. One clutch can have as many as 3,478,000 eggs! These eggs drift until they settle into cracks in the sand or gravel. It can take 30 to 128 days for the eggs to hatch.

People have found many interesting uses for the burbot over time. Because the meat tastes like lobster, some people call it the "poor man's lobster."

In the 1920s, a man named Theodore Rowell discovered something amazing about their livers. He found that burbot livers have much more vitamin D and vitamin A than cod-liver oil. This discovery helped him start a company to make health products. In some places, like Manitoba, people even hold a big festival for them. They even have a spearfishing tournament where they serve deep-fried fish to everyone.
