Burbot live in many cold places. They are found in North America and Europe. They like deep, cold rivers and lakes. Many burbot live under ice during the winter. They move to shallow areas to spawn. Spawning is when fish lay eggs to make babies. They do this in very cold water.

These fish spend most of their time near the bottom. We call this a benthic lifestyle. They hide in mud, sand, or rocks. They eat many things, like other fish, frogs, and even birds.

Burbot can live for a long time. Some live for over 20 years. Their meat tastes like lobster. Because of this, people call them the "poor man's lobster." Their livers are also very special. They have a lot of vitamin D and vitamin A.
