Bok choy is a special kind of Chinese cabbage. People love it for its tasty leaves and stems. In Cantonese, the name means "white vegetable." Some people call it pak choi instead. You might also hear it called spoon cabbage. It looks like a cluster of mustard greens.

It does not grow in a round head like other cabbages. Instead, it has green leaves and a bulbous bottom. The taste is sweet and a little peppery. It is a mix between spinach and water chestnuts.

There are two main types of this vegetable. One type is called white bok choy. It has dark green leaves and white stalks. This type is mostly grown in South China. The other type is green bok choy. It has light green stalks and grows in East China. Young plants are called baby bok choy. These are very tender but can get soft if you cook them too much.

In Australia, experts use different names for these. They use "buk choy" for the white kind. They use "pak choy" for the green kind.

Cooking bok choy is very fast. You can stir-fry it in a pan. You can also steam it or simmer it in water. Steaming a whole plant takes about eight minutes. If you stir-fry, it only takes two or three minutes. The leaves cook much faster than the stems.

You can even eat it raw in a salad. Some people like to dry it to make it sweeter. You can also pickle it. Pickled bok choy stays good to eat for many months.

This vegetable has a very long history in China. It grew from the mustard plant. People have grown it since the 5th century CE. Some seeds found in the Yellow River Valley are 6,000 years old!

It spread from China to places like Japan and the Philippines. By the early 1800s, it was in Japan and Malaya. A Swede named Osbeck brought seeds to Europe in the mid-1700s. Later, it arrived in North America during the 1800s. It took another hundred years to become very popular there.

Bok choy is also a very healthy food. It is 95% water. It has very little fat.
