language culture Maturity 5-7 Next article →

Bok choy is a type of Chinese cabbage. It is a leafy green vegetable. People call it pak choi in some places. In Cantonese, the name means "white vegetable."

This plant does not form a round head. It has green leaves and a bulbous bottom. Some types have white stalks. Others have light green stalks. Small, young plants are called baby bok choy.

The taste is between spinach and water chestnuts. It is a bit sweet and peppery. The green leaves have a strong flavor. The white stems are milder.

You can eat it raw in a salad. You can also cook it in a pan or steam it. The leaves cook much faster than the stems. You can even pickle it to keep it for months.

Bok choy has a very long history. It came from China. People grew it there a long time ago. Some seeds found in China are 6,000 years old! It is a healthy food, too. It has a lot of vitamin C and vitamin A. It is also mostly water.
