It is a type of wild cabbage. Many people call it a German turnip. Others call it turnip cabbage. It is not actually a turnip or a rutabaga. It is part of a big group of plants. This group includes broccoli, cauliflower, kale, and Brussels sprouts. People find it interesting because of its strange shape. It is a biennial plant. This means it lives for two years. In the second year, it will bloom and make seeds.

The plant has a very specific way it grows. It uses something called lateral meristem growth. This means the stem grows out to the sides. This makes the stem look swollen and nearly round.

The stem can be white or purple. If it is purple, the color is only on the outside. The inside parts are always a pale yellow. Some varieties have a very thin stem. A variety called Haakh grows this way. Most kohlrabi matures in about 55 to 60 days. The Gigante variety can grow to be very large. It stays good to eat even when it is huge.

We have known about kohlrabi for a long time. A botanist named Mattioli wrote about it in 1554. He said it had recently arrived in Italy. By the end of the 1500s, it spread much further. It grew in North Europe and places like Austria. It was also found in Germany and England. People grew it in Italy and Spain too. It even reached Tripoli and the eastern Mediterranean. Many different types exist today. These include 'White Vienna' and 'Purple Danube'. There is also 'Grand Duke' and 'White Vienna'.

You can eat almost every part of this plant. You can eat the stem and the leaves. The stem has two tough, fibrous layers. These layers do not get soft when you cook them. Most people peel them away first. The stem tastes like a broccoli stem or cabbage heart. It is sweeter and milder than those plants. The young stem can be very crisp and juicy. It feels a bit like eating a fresh apple.
