These are a type of flavonoid pigment. The name comes from Ancient Greek words for flower and yellow. They can look white or even clear. Sometimes they look like a creamy yellow color. You will often see them on flower petals. They are very important for the world of plants.

These pigments change color in different ways. They are water-soluble, which means they can dissolve in water. If they are in an acid, they look whiter. In an alkaline medium, they look more yellow. They also change color near certain minerals. Metal ions can cause these color changes too. This happens in a way similar to anthocyanins.

Scientists study how these pigments are built. Anthoxanthins have a backbone made of flavone and flavonol. This is different from anthocyanins. Anthocyanins have a backbone made of flavylium. Because of this, anthocyanins look blue. Anthoxanthins usually stay in the yellow family. Making anthocyanins is a hard job for a plant. It requires a special set of genes. This makes them rarer in nature.

There are many specific types of these pigments. Some examples include apigenin, luteolin, kaempferol, and quercetin. Quercetin is a very famous one. You can find it in many foods. It is in kale and red onions. It is also found in capers. These pigments have antioxidant properties. This makes them important for nutrition.

Humans use anthoxanthins in many helpful ways. We use them as food additives. This can add color or flavor to what we eat. People also use them to make dyes. These dyes can be yellow, orange, or red. They are used for textiles like cloth. They are also used in cosmetics. This shows how plant colors help us every day.
