Anthoxanthin

life science Maturity 5-7 Next article →

Anthoxanthins are a specific type of flavonoid pigment found in plants. The name comes from two Ancient Greek words. The word *anthos* means flower. The word *xanthos* means yellow. These pigments are essential for the appearance of many plants. They can appear as a white or colorless substance. They can also look like a creamy or yellow color. You will often find them on the petals of various flowers.

These pigments are water-soluble. This means they can dissolve in water. Because of this property, they react easily to their surroundings. Anthoxanthins change color based on the chemical environment. In an acid medium, the pigments appear whiter. In an alkaline medium, they turn more yellow. They are also very sensitive to minerals. Metal ions can cause these pigments to change color as well. This reaction process is similar to how anthocyanins behave.

To understand these pigments, we must look at their chemical structure. Anthoxanthins belong to the flavonoid family. Their molecular backbone is made of flavone and flavonol. This specific structure determines their color. It also distinguishes them from other related pigments. The backbone acts as the foundation for the molecule. This foundation dictates how the pigment interacts with light and chemicals.

Anthocyanins are another type of flavonoid. However, they have a different chemical backbone. Their backbone is made of flavylium instead of flavone or flavonol. This small change in structure has a large effect. While anthoxanthins are typically yellow, anthocyanins present a blue color. Creating anthocyanins is a complex task for a plant. It requires a special set of genes to perform the work. Because of this genetic requirement, anthocyanins are rarer in nature than anthoxanthins.

There are several distinct types of anthoxanthins. Scientists have identified specific examples of these molecules. These include apigenin, luteolin, kaempferol, and quercetin. Each of these is a specific type of the larger flavonoid group. They share the same basic characteristics but are unique in their own right. Knowing these names helps scientists identify exactly which pigment is present in a plant sample.

Quercetin is one of the most well-known examples of an anthoxanthin. It is highly significant for human nutrition. Like all flavonoids, quercetin has antioxidant properties. This makes it a valuable part of a healthy diet. You can find quercetin in many different fruits and vegetables. Some common sources include kale and red onions. It is also found in capers.

Humans use anthoxanthins for many practical purposes. We use them as food additives. This allows us to add specific colors or flavors to various foods. Beyond food, they are also used to produce dyes and pigments. These pigments can be turned into yellow, orange, or red dyes. These dyes are used in many industries. They are used to color textiles like cloth. They are also used in the production of cosmetics.
