How does the fruit get its dark color? It happens because of things called anthocyanins. These are natural pigments found in many flowers and fruits. They are not very common in citrus fruits. The main pigment in these oranges is called chrysanthemin. The color develops in a specific way. The fruit needs low temperatures during the night to turn red. This happens as the fruit grows. The color can even grow more while the fruit stays in cold storage.
