White rice

language culture Maturity 11-13 Next article →

White rice is a bright and shiny food. It is a small grain that many people eat. To make it, people remove the outer layers of the seed. They take off the husk and the bran. They also remove the germ. This leaves the starchy endosperm. This process changes the flavor and texture. It also makes the rice easier to digest. White rice stays good to eat for a long time.

Making white rice involves two main steps. First, the rice is milled. This is often called hulling. After that, the rice is polished. Polishing makes the rice look white and shiny. This process removes the bran and the germ. These layers hold many nutrients. The milling and polishing can take away vitamins. This is why the rice looks so different from brown rice.

People have changed how they make rice over time. Long ago, people used hand pounding. They used large tools called a mortar and pestle. Later, machines made the work faster. In 1870, the Huller & Sheller Mills were made. The Engelberg Milling Machine came in 1890. By 1955, new machines in Japan improved things. These machines could produce much larger amounts of rice.

Nutrients in rice can change based on how it is made. Brown rice has much more fiber and vitamins. White rice can lose vitamins like B1 and B3. It can also lose iron. Without these, people can get a disease called beriberi. To help, many people use enrichment. This means adding nutrients back into the rice. In the United States, law requires this for some programs. This adds back B1, B3, and iron.

Rice is a very common part of many meals. When you cook it, the weight changes. You might start with 100 grams of uncooked rice. After cooking, it can weigh 240 to 260 grams. This happens because the rice absorbs water. Even without enrichment, white rice has manganese. It also has pantothenic acid and selenium. The exact nutrients depend on the soil and the environment.
