To make it, people remove the outer layers. They take off the husk, the bran, and the germ. This leaves the starchy endosperm. This way of making rice changes how it tastes. It also makes the rice easier to digest. White rice stays good to eat for a long time.

Making white rice can take away some nutrients. Brown rice has more vitamins and minerals. In the past, people used tools to pound rice by hand. Later, big machines were made to make much more rice. These machines can make very large amounts quickly.

Because it loses nutrients, some rice is enriched. Enrichment means adding vitamins back in. In the United States, laws say some rice must be enriched. This adds back iron and vitamins like B1 and B3. This helps keep people healthy. Without these, people can get a disease called beriberi. Even without extra vitamins, white rice still has manganese. When you cook it, the rice soaks up water. This makes the weight grow as it cooks.
