Most of the egg white is water. It is about 90% water. The rest is mostly protein. It has almost no fat. This makes it a good source of protein for people. Some people have an allergy to egg whites. Most children grow out of this allergy by age five.

You can change egg whites by beating them. Use a whisk to mix in air. This makes the proteins unfold. This is called denaturation. The proteins then join together to make a foam.

You can make soft or stiff peaks with this foam.

People use egg whites in many ways. Chefs use them to make meringue or mousse. They can also make a light froth on top of drinks. In the past, artists used egg whites to make old photos. They also used it to help stick gold to books.
