He is most famous for a specific style of comedy known as mo lei tau. This unique brand of humor has left a lasting mark on Chinese popular culture. Many fans and critics view him as a major cultural icon. Some international institutions, like the Brooklyn Academy of Music, have even called him the "King of Comedy." His work spans several decades of television and cinema.

Chow's path to fame involved several distinct stages of professional growth. He began his career working as an extra for Rediffusion Television. Around 1980, he attempted to join the TVB artist training course. He was initially rejected and worked as a boring office assistant for a shipping company. A friend eventually helped him get admitted to the 1982 training class. He then spent five years hosting the children's program 430 Space Shuttle. This role helped him build a connection with the public.

His transition into a major movie star happened through a series of rapid successes. In 1988, he won a Golden Horse Award for Best Supporting Actor. He then starred in the 1989 television series The Final Combat. His film All for the Winner, released in 1990, became the highest-grossing Hong Kong film of all time. He followed this with hits like God of Gamblers II and Tricky Brains. These films earned HK$40 million and HK$31 million respectively at the box office.

Chow's career also faced periods of difficulty and intense competition. After some films underperformed, magazines suggested his career might be over. However, he recovered his status with the film Fight Back to School in 1991. This movie earned HK$43 million at the local box office. It was a major milestone because it allowed Chow to unseat Jackie Chan at the top of the Hong Kong box office. In 1992, Chow's dominance was so strong that five of his films held the top five spots.

As he matured, Chow moved into writing and directing his own projects. He founded his own production company called Choi Sing Company. He attempted several Hong Kong-Mainland co-productions, such as A Chinese Odyssey in 1995. These films initially received mixed reviews and underperformed at the box office. These production efforts were often chaotic because the Hong Kong crews spoke Cantonese while Mainland crews spoke Mandarin. Despite the early failure, these films became cult favorites. They became a foundational part of early Chinese internet culture through memes and expressions.

In the 2000s, Chow achieved massive international recognition as a director. His 2001 film Shaolin Soccer grossed over US$50 million worldwide. It also earned him Best Director and Best Actor awards at the 2002 Hong Kong Film Awards. His 2004 film Kung Fu Hustle was an even larger success, grossing over US$106 million worldwide. He won over twenty international awards for this film. His final performance as an actor was in the 2008 film CJ7.

In 2016, his film The Mermaid broke numerous records and became the highest-grossing film of that year in China. The Mermaid eventually grossed over US$553.81 million worldwide. This achievement made Chow the ninth top-grossing Hollywood director in 2016. He continues to influence the film industry through his unique comedic vision.
