His career has spanned more than forty-five years of continuous work. During this time, he has appeared in over 100 television drama series and films. Chow is celebrated for his extreme versatility across many different genres. He can perform in intense action films and emotional melodramas. He also excels in comedies and historical dramas. This wide range of skill has earned him many prestigious honors. These include three Hong Kong Film Awards for Best Actor and two Golden Horse Awards for Best Actor.

Chow's early life was defined by hard work and limited resources. He was born on May 18, 1955, on Lamma Island, Hong Kong. His father worked on a Shell Oil Company tanker. His mother was a cleaning lady and a vegetable farmer. The family lived in a house that lacked electricity. Every morning at dawn, Chow helped his mother sell herbal jelly. He also sold Hakka tea-pudding on the streets. After moving to Kowloon at age ten, he left school at seventeen. He worked as a bellboy, postman, camera salesman, and taxi driver to support his family.

His professional journey began in 1973 through a TVB actor training program. After one year of training, he signed a three-year contract. He initially gained recognition in soap operas like The Killer and Hotel. He eventually moved from television to film after signing with Goldig Films. This company was the third largest film studio in Hong Kong. While his early 1980s films had lower box office returns, his 1970s work was successful. Most of his Goldig Films movies earned over HK$1 million per film. This was a strong performance for that era.

Chow achieved global superstar status through specific cinematic collaborations. He worked with director John Woo on five major action films. These included A Better Tomorrow (1986) and The Killer (1989). A Better Tomorrow was a massive turning point for his career. It was the highest-grossing film in Hong Kong history at that time. This movie helped establish the "heroic bloodshed" or "gun fu" style of filmmaking. Chow also worked with director Ringo Lam on films like City on Fire (1987). These collaborations helped bring Hong Kong gangster films to world prominence.

Beyond action, Chow demonstrated immense range in other genres. He starred in the romantic blockbuster An Autumn's Tale (1987). For this role, he won a Golden Horse Award for Best Actor. He also performed in the comedy God of Gamblers (1989). This film broke Hong Kong's all-time box office record. It combined his skills as a charmer, a comedian, and an action hero. Because of his youthful look and tough roles, he earned the nickname "Babyface Killer." He proved he could lead many different types of stories successfully.

Chow also sought success in the Hollywood film industry. He made his Hollywood debut in The Replacement Killers (1998). While some of these films were box office failures, others were massive hits. He played Li Mu-bai in the film Crouching Tiger, Hidden Dragon (2000). This movie was a major success at the international box office. It also won Academy Awards. In 2007, he played Captain Sao Feng in Pirates of the Caribbean: At World's End.

This role was later omitted in mainland China due to censorship concerns.

Despite his massive fame, Chow maintains a very modest lifestyle. He is known for frequenting local food stalls in Hong Kong. He also regularly uses public transportation to travel. He is a very active person and ran a half marathon in late 2023. Chow is also recognized for his significant philanthropy. He released a photo collection in 2008 to help earthquake victims in Sichuan. He has stated his intention to donate 99% of his wealth to charity. In 2023, he was honored as the Asian Filmmaker of the Year at the Busan International Film Awards.
