It is famous for its delicate texture and its ability to soak up sweet flavors. Many people enjoy it with fresh fruits, creamy custard, or sugary frostings. Some versions are very simple, while others are quite fancy. Because they are light, they can be used in many different desserts. This includes treats like ladyfingers, trifles, or even strawberry shortcakes.

Making a sponge cake is a special way of working with ingredients. A basic recipe uses flour, sugar, and eggs. To make the cake rise, bakers use a method called aeration. This means they whisk egg whites to trap tiny air bubbles inside. These bubbles create a foam that makes the cake fluffy.

Some bakers add baking powder to help it rise even more. Other types, like the Genoise cake, add melted butter to make it moist. Some even use potato flour to keep the cake from drying out.

Sponge cakes have a very long and interesting history. Some people think the use of egg and sugar mixtures began in Moorish Spain around the 11th century. The earliest English recipe was written by the poet Gervase Markham in 1615.

His recipe was quite different from what we eat today. It was more like a thin, crisp cracker seasoned with anise and coriander seeds. In the 19th century, bakers began using beaten eggs to make the cakes much lighter. This change helped create the soft cakes we recognize now.

Many famous cakes have come from new discoveries in science and history. In 1843, a British manufacturer named Alfred Bird created baking powder. This invention allowed bakers to add butter to their recipes. This led to the creation of the Victoria sponge, named after Queen Victoria.

In America, angel food cake was also invented during the 19th century. It is unique because it uses only egg whites and no butter.

Different cultures have found their own wonderful ways to enjoy sponge cake. In the Philippines, people enjoy sponge and chiffon cakes. They might use purple yam or pandan leaves for flavor.
