Shortcrust is a special type of pastry. People use it to make many yummy things. It can be the base for a tart or a quiche. You might use it for a sweet apple pie. It also works for a savory chicken pie.

Some people use it to make spritz cookies. This version uses butter and sugar to make it sweet. This dough is very important in many kitchens.

Making this pastry is a careful way of working. First, you must mix flour and fat. Most recipes use twice as much flour as fat. You can use butter, lard, or shortening. Many cooks rub the fat into the flour. This creates a loose, crumbly mixture. Then, you add a little ice water to bind it. Finally, you roll the dough out into a shape.

There are different kinds of shortcrust from France. Pâte à foncer is a type that includes egg. Pâte brisée is similar but uses more butter. This makes it lighter and more delicate. Pâte sablée uses more sugar to make it sweet. This sugar helps the pastry break up easily in your mouth. Pâte sucrée is another kind that uses creamed butter. It makes a snappy and dry pastry instead of a crumbly one.

Keeping the ingredients cold is a very important rule. You should not blend the fat and flour together. Instead, you "cut" them into each other. You can use a tool called a pastry blender. Some people use two knives or even their hands. Keeping it cold helps create steam during baking. This steam makes the flaky pockets in the crust.

If you work the dough too much, it gets tough.

Cooks use many ways to make a pie look beautiful. You can crimp the edges with your fingers. You can also use a tool like a pie crimper. This helps seal the top and bottom crusts together. This keeps the filling from leaking out. You can also pierce the top to let steam escape. One way is called latticing, which uses strips of dough. Another way is a peekaboo lattice made from slits.
