Pastry is a special group of baked goods made from different kinds of dough.

These doughs are often enriched with extra fat or eggs to make them delicious. While simple breads are not called pastries, these treats are known for being delicate. They often have a texture that is very flaky or crumbly. People enjoy them as sweet treats or savory meals. Common examples include pies, tarts, croissants, and turnovers. Some people even call sweet pastries "baker's confectionery."

Making pastry requires careful steps to get the right texture.

For shortcrust pastry, a baker mixes fat into flour first. They might use a tool called a pastry blender to chop the fat into the flour. This helps prevent the fat from melting with the heat from fingers. Adding water then binds the dough together. It is very important to chill the dough before rolling it out. Chilling helps the fat harden so the pastry becomes tender and flaky.

The history of pastry goes back a very long time. In the ancient Mediterranean, the Greeks, Romans, and Phoenicians all made filo-style pastries. In the 5th century BC, Greek plays mentioned sweet pastries filled with fruit. Romans used dough to cover meat during baking to keep it juicy. However, they did not always eat that dough. In Northern Europe during the medieval times, chefs used butter and shortening. This helped them make stiffer pastries that stayed together well.

There are many different types of pastry used around the world. Puff pastry uses many layers of fat that turn into steam to make it rise. Choux pastry is a light dough that can be piped into shapes like éclairs.

Pastry traditions are also very strong in Asia. Chinese pastries can be made from rice or different flours. They often use fillings like fruit, sesame, or sweet bean paste. Mooncakes are a special part of the Chinese Mid Autumn Festival. In Japan, people enjoy specialized confections called mochi and manjū. These Asian pastries are often different from Western ones. Usually, Western pastries are much sweeter than the ones found in Asia.
