Sfax has a very long history that goes back many centuries. The Aghlabids founded the modern city in AD 849. They built it on the ruins of an older town called Taparura. The city grew to cover other ancient places like Thenae. Over time, many different groups ruled the area. King Roger II of Sicily conquered the city in 1148. Later, the Spanish occupied it in the 16th century. Eventually, the Ottoman Empire took control. In 1881, France made Tunisia a protectorate. British forces later took the city during World War II in 1943. Tunisia finally gained its independence in 1956.

Today, the city is known for many different kinds of work. Sfax is the largest fishing port in Tunisia. It is also a major center for international trade. People there work with phosphate and many different nuts. A very important job is processing olives. The olive oil from this area is of a unique quality.
