Sfax receives much less rain than Tunis. It also receives less rainfall than the Libyan cities of Tripoli and Benghazi. The local hydrography is shaped by this flat topography. Many rivers are shallow and rarely reach the sea. Most are endorheic, meaning they flow into closed depressions called sebkhas or garâas.

Sfax has a complex history involving many different powers. The Aghlabids founded the modern city in AD 849. They built it upon the ruins of the ancient town of Taparura. The city also grew over the site of Thenae. In 1148, King Roger II of Sicily conquered the city. Later, Spanish forces occupied the area during the 16th century. The Ottoman Empire eventually took control of the region. In 1881, France established a protectorate over Tunisia. During World War II, Axis powers used Sfax as a base. British forces eventually took the city on 10 April 1943. Tunisia gained its independence from France in 1956.

The historic Medina is a central part of the city's identity. It was built by the Aghlabid prince Abu Abbass Muhammad between 849 and 851. The Medina is home to about 113,000 residents. It is dominated by the Great Mosque of Sfax.
