The potato is a starchy, tuberous vegetable that serves as a staple food for much of the world.

Technically, it is an underground stem tuber belonging to the plant Solanum tuberosum. This plant is a perennial member of the Solanaceae family, commonly known as the nightshade family. Because potatoes provide essential nutrients and calories, they are an integral part of the global food supply. Their importance is so great that the United Nations established the International Day of Potato, celebrated annually on May 30.

Growing a potato involves a complex biological process within the plant. The potato plant is herbaceous and can grow up to one meter tall. It features hairy stems and leaves organized into roughly four pairs of leaflets. Insects pollinate the flowers, which can appear in shades of white, pink, blue, or purple. After flowering, the plant produces small green fruits that resemble tiny cherry tomatoes.

These fruits contain about 300 very small seeds. Under the soil, the plant develops tubers to store nutrients. These tubers form from thickened rhizomes located at the tips of long, thin stems called stolons. The surface of each tuber features "eyes," which are vegetative buds arranged in a helical pattern. Additionally, tubers have small circular holes called lenticels that allow them to breathe.

Potatoes are categorized by their genetic makeup and chromosome counts. The most common species used in global agriculture is Solanum tuberosum, which is a tetraploid with 48 chromosomes. Other species include diploid varieties with 24 chromosomes, such as S. stenotomum and S. phureja. There are also triploid species with 36 chromosomes, including S. chaucha. A single pentaploid species, S. curtilobum, possesses 60 chromosomes.

These genetic differences allow potatoes to adapt to different environments. For example, the Andean potato is adapted to short-day conditions in tropical mountains. In contrast, the Chilean potato is adapted to the long-day conditions of higher latitudes.

The history of the potato begins in the Americas, specifically in the Andes region. Genetic studies suggest the cultivated potato has a single origin in present-day southern Peru and northwestern Bolivia. Pre-Columbian farmers domesticated the plant from the S. brevicaule complex approximately 7,000 to 10,000 years ago.

The Spanish introduced the potato to Europe during the second half of the 16th century. While European farmers were initially slow to adopt the crop, it became a vital staple after 1750. It is estimated that the potato was responsible for one-quarter of the population growth and urbanization in the Old World between 1700 and 1900.

Modern potato production is a massive global industry with significant regional variations. There are currently over 5,000 different varieties of potatoes grown worldwide. As of 2023, China and India led the world in total production.

However, Northern and Eastern Europe maintain the highest per capita production levels. In the United States, common varieties include Yukon Gold and red potatoes. Culinary uses often depend on the starch content of the variety. Floury potatoes have higher starch levels, between 20% and 22%, making them ideal for mashing. Waxy potatoes have lower starch levels, between 16% and 18%, which helps them retain their shape when boiled.

Despite their success, potatoes face serious biological threats. A lack of genetic diversity can make crops vulnerable to devastating diseases. In 1845, a fungus-like organism called Phytophthora infestans caused late blight. This disease spread through Ireland and the Scottish Highlands, leading to the Great Irish Famine.

To fight this, scientists use wild relatives like S. demissum and S. bulbocastanum to breed resistance. These wild species are highly valuable because they contain genes that help modern potatoes survive blight. Researchers even use advanced tools like CRISPR-Cas9 to study genes like 'Sli' to improve breeding processes.

Beyond nutrition, the potato is deeply connected to linguistics and science. The English word "potato" actually derives from the Spanish word 'patata,' which came from the Taíno word for "sweet potato." In several languages, including French and Dutch, the term for potato translates to "earth apple."

Scientifically, the potato is part of the Solanum genus, which includes the tomato and various nightshades. While most tubers are safe, the aerial parts of the plant contain a toxin called solanine. If skins or sprouts are exposed to light, they can produce glycoalkaloids that may become toxic. This makes proper storage and light management essential for safe consumption.
