Vegetables are the edible parts of plants consumed by humans and animals. This term can be used in several different ways depending on the context. In biology, the word "vegetable" is an adjective meaning anything related to plants, whether edible or not. This includes the vegetable kingdom or vegetable matter. In a culinary sense, people use the word to describe plants grown for food. This often includes savory items like tomatoes, squash, or broccoli. However, this definition can be arbitrary because it excludes many other plant parts like nuts or cereal grains.

To understand how vegetables move from a field to a kitchen, one must look at the production chain. The process begins with cultivation, which can range from subsistence farming to large agribusinesses. Subsistence farmers grow crops to meet the immediate needs of their families. In contrast, agribusinesses manage vast acreages to grow single-product crops for sale. Once the crop reaches maturity, it undergoes harvesting. This is followed by a sequence of grading, storing, processing, and marketing.

Vegetables are categorized by which part of the plant is eaten. This variety is immense and covers roots, stems, leaves, flowers, fruits, and seeds. For example, carrots and radishes are grown for their roots. Cabbage and lettuce are grown for their leaves. Broccoli is harvested for its flower heads, while peas and beans are grown for their pods and seeds. Some items, like the potato, are valued for their tubers, which are thickened underground stems.

The history of vegetable consumption is tied to the development of agriculture. Before farming, humans were hunter-gatherers who foraged for wild stems, leaves, and tubers. Between 10,000 BC and 7,000 BC, people began to domesticate plants. One early method was forest gardening in tropical jungle clearings. People identified useful species and encouraged them to grow while removing undesirable ones. This eventually led to plant breeding. Farmers selected specific strains with desirable traits, such as vigorous growth or larger fruit.

Different civilizations have relied on specific vegetables for thousands of years. The Aztecs in Central America supplemented their maize with tomatoes, avocados, and squash. In Peru, the Incas grew potatoes at high altitudes and used quinoa seeds. Ancient Egyptians ate a variety of vegetables, including lentils, onions, and leeks. In ancient China, people paired rice or wheat with yams, soybeans, and garlic. Even in ancient Rome, people ate green vegetables like peas, onions, and turnips.

Modern vegetable production is a massive global industry. China is currently the largest producer of vegetables in the world. Global trade allows consumers to buy crops grown in faraway countries. The scale of production is reflected in the weight of specific crops. In 2018, potato production reached 368.1 million tons. Tomato production was 182.2 million tons, while cassava production reached 277.8 million tons.

Vegetables are essential for human nutrition and physical development. They are generally low in fat and carbohydrates but high in dietary fiber. They provide essential vitamins, such as A, C, and E, as well as minerals. Nutritionists often recommend eating five or more portions of fruits and vegetables a day. Research suggests that eating more than five servings can lower the risk of coronary heart disease or stroke by approximately twenty percent. Furthermore, eating crunchy, raw vegetables during youth helps the jaw grow to its full size. This ensures there is enough room for teeth to grow in correctly.

While beneficial, some vegetables contain natural toxins used for defense. These include substances like cyanide precursors in cassava or phytohaemagglutinin in some beans. These toxins are meant to ward off insects, fungi, and predators. However, many of these substances can be deactivated through adequate cooking. It is also important to note that some items like mushrooms or seaweed are often treated as vegetables in cooking, even though they are not technically parts of plants.
