As a teacher, Taffanel changed how students learned. He became a professor at the Conservatoire in 1893. He gave his students more individual attention in class. He taught them to play with a smooth style. He also used a light vibrato. Vibrato is a tiny, gentle shake in the sound. He wanted the music to feel like it came from the heart.

Taffanel also loved old music from many years ago. In 1894, he began teaching music by Johann Sebastian Bach. Before this, many French musicians did not play Bach's music. Taffanel toured across Europe to play these older pieces. He even played Mozart concertos in Leipzig. This helped bring interest back to early music in France. He also started a group for wind instruments in 1879.
