Its scientific name is Olea europaea. These trees are often short and squat. They rarely grow taller than 30 feet. However, some special trees in Italy grow much larger. The trunks are often gnarled and twisted. The leaves are a pretty silvery green color. They are shaped like long ovals. These trees are very tough and live a long time. Some can live for thousands of years.

Growing an olive is a very interesting thing that happens. First, small white flowers grow on the tree. These flowers have four yellowish white petals. The flowers grow slowly over several weeks. In hot weather, they bloom quite fast. After the flowers bloom, they turn into fruit. The fruit is called a drupe. A drupe is a fruit with a hard pit inside. This is just like a peach or a cherry.

People harvest the fruit while it is still green or purple. Most of the fruit is crushed to make oil. About 80% of all olives are made into oil. Only 20% are eaten as fruit. We call these "table olives."

Humans have a very long history with this tree. People likely began growing olives in the Levant area. This happened between 6,000 and 4,000 BC. Some evidence shows people used olives in Africa much earlier. The Phoenicians were famous sailors who helped spread the tree. They moved olives throughout the Mediterranean starting in the 16th century BC. They brought the trees to the Greek islands. By 3500 BC, olives had taken root in Crete. Later, they reached Iberia around 1050 BC.

Many different places grow olives today. Spain, Italy, and Greece are the biggest producers. Other major countries include Turkey, Tunisia, and Syria. They also grow in Morocco, Algeria, and Portugal. There are thousands of different types of olive trees. Some types are made just for oil. Other types are made just for eating. Some are even grown as small, pretty shrubs. These are called dwarf olives.

Olives have been useful to people for many reasons. In the past, the oil was used for lamp fuel. It was also used for soap and medicine. People even used the oil for personal grooming. The wood from the tree can be used for building. Because the trees are so strong, they are symbols of peace. The ancient Greeks thought the tree was sacred. They saw it as a symbol of wisdom and prosperity. Today, olives are still a main part of many meals. They are a very important part of life in the Mediterranean.
