Cooking in Morocco uses many wonderful ingredients and steps. Chefs often use meat like lamb, beef, goat, or chicken as a base. They cook these with many spices and vegetables in a special pot called a tagine.

One very famous dish is couscous, which is made from small grains of wheat. People often serve it with meat and a sweet topping called tfaya. This topping is made of caramelized onions, raisins, sugar, butter, and cinnamon.

Many meals also include fresh salads like zaalouk, which is made of eggplant and tomato.

This way of cooking has a very long history. Some traces of Moroccan food go back to the 7th century BC. In the past, coastal places like Sala and Kerne made olive oil and wine.

During the Roman period, people even made a fermented fish sauce called garum. The famous grain dish, couscous, likely started with the Berbers of Algeria and Morocco. It became popular between the 11th and 13th centuries. People have even found special bowls for making couscous from the 12th century.

Some spices come from far away, but many are grown right in Morocco. For example, saffron comes from Talaouine and mint comes from Meknes. Other common spices include cinnamon, cumin, ginger, and turmeric. People also use many herbs like parsley, coriander, and sage. These ingredients give the food its bright and tasty flavors.

Food is also a big part of daily life on the streets. You can find many snacks at places like the Djemaa el Fna square in Marrakesh. One popular snack is maakuda, which is a potato fritter.
