For the most popular shape, you use a technique called the pinched-edge fold. First, put one tablespoon of filling in the center of a wrapper. Fold the edge halfway over the filling to make a half-moon shape. Use your thumbs and fingers to make small pleats along the edge. Then, clench the pleats to make sure the seal is tight. This creates a beautiful crescent shape that is very common in China. In some places, cooks place them on a tool called a bi to keep their shape.

There are many old stories about how jiaozi began.

One story says a doctor named Zhang Zhongjing invented them during the Eastern Han era. He saw people with frostbitten ears during the cold winter. To help them, he made a stew with lamb, pepper, and warming medicines. He chopped these ingredients and wrapped them in small pieces of dough. He boiled these "tender ears" and gave them to his patients. People began making them to celebrate the New Year and to stay warm.

Jiaozi have been part of history for a very long time.

During the Tang dynasty, they became very popular and were called Bian Shi. Archaeologists even found a bowl of them in an old tomb in Turpan. The dumplings are very important during the Chinese New Year. They look like gold and silver ingots, which were used as money in Imperial China. Because of this shape, eating them symbolizes wealth and good fortune. Some families even hide a clean coin inside a dumpling for extra luck!

These delicious dumplings have traveled to many different places.
