In many East and Southeast Asian countries, jellyfish is a common seafood. In places like China, Korea, Vietnam, and Japan, it is often called a delicacy. This means it is a prized and special treat. People use it in many different ways to make meals. You might find it in a cold salad or inside sushi. It can even be part of crunchy noodles in Thailand.

Some people even believe it helps ease pain in muscles and bones.

Making jellyfish ready to eat is a very careful job. Since jellyfish spoil quickly at room temperature, workers must start right after the catch. First, they remove the long tentacles. Most people only cook the upper dome part of the animal.

The bell and the arms are washed in seawater. Then, workers scrape away the mucus and the gonads. To dry it, they sprinkle the jellyfish with salt and alum. Alum is a powder that helps make the texture firm. In Malaysia and Thailand, workers add sodium bicarbonate to make it extra crisp. This whole process can take between 19 and 37 days.

People have been eating certain jellyfish for a very long time. In China, some species have been used for over 1,700 years. These jellyfish come from the Rhizostomeae group and are caught near the coast. Many different types of jellyfish are used for food today. Common ones include Rhopilema esculentum and Rhopilema hispidum. Other species include the cannonball jellyfish and Nomura's jellyfish. Each type brings something different to the dinner table.

There are many important numbers and places in the jellyfish industry. In 2001, the global harvest was estimated at a huge amount. Many countries help produce it, such as Myanmar, China, Indonesia, and the Philippines. In Southeast Asia, fishermen use many tools like drift nets or hand nets. The fishing season is quite short, lasting only two to four months. In 2001, Japan imported between 5,400 and 10,000 tons of jellyfish from many neighbors. These neighbors include Singapore, Vietnam, and Malaysia.

Jellyfish are unique because they do not have a strong flavor. They are mostly water and have very little fat. Instead, people eat them for the way they feel in the mouth. They can be crunchy, chewy, or even slightly bouncy.

For example, a company in Japan makes vanilla ice cream with jellyfish cubes. In Sarawak, Malaysia, the Melanau people make a fresh salad called Umai. Even students in Japan created a jellyfish powder for making sweets. It is a food that shows how many ways we can enjoy the sea.
