Fish is a very important part of many diets. It provides high-quality protein that is easy for the body to use. It also helps prevent many nutrient deficiencies.

There are many different ways to prepare fish for a meal. You can eat some types of fish completely raw, such as sashimi. Other methods include curing fish by marinating it or pickling it. You can also smoke fish to change its flavor. Many people prefer to cook fish by baking, frying, grilling, or steaming it. Some people even poach fish in a liquid called court-bouillon. These different methods can change how the fish tastes and feels.

Scientists have described over 32,000 different species of fish. This makes them the most diverse group of vertebrates on Earth. People eat many different kinds of fish and shellfish. Some fish are called whitefish because they have very little fat. For example, Alaska pollock and haddock are types of whitefish. Other fish are called oily fish because they have more fat. Sardines and herring are examples of oily fish. This fat contains omega-3 fatty acids, which are good for your heart.

In 1961, Europe, Japan, and the United States ate 47 percent of the world's fish. By 2015, that number dropped to about 20 percent. In 2015, the world consumed 149 million tonnes of food fish. Asia ate the most, taking more than two-thirds of that total. This equals 106 million tonnes of fish for Asia. Oceania and Africa consumed the lowest share of the global total. This shift happened because of growing markets in many Asian countries.

While fish is healthy, we must be careful with how we eat it. Some fish, like the fugu pufferfish, have natural toxins to protect them.

A licensed chef in Japan must prepare fugu to make it safe. Other fish can carry toxins from tiny algae in the water. This can happen to large fish like grouper or red snapper. Some people also have seafood allergies that make them sick. It is also important to watch out for fish bones. Choking on a bone can cause a person to have trouble breathing.
