We eat many different things for energy and nutritional support. These foods provide essential nutrients like carbohydrates, fats, proteins, vitamins, and minerals. Humans are highly adaptable omnivores. This means we can find food in many different ecosystems. We eat things from plants, animals, and even fungi.

Humans have five main types of taste: sweet, sour, salty, bitter, and umami. Sweetness often comes from simple sugars like glucose or fructose. In nature, sweet tastes usually mean a food has a lot of energy. Sourness comes from acids, such as the juice in a lemon. Saltiness helps our bodies maintain a delicate electrolyte balance. Umami is a savory taste found in foods like cooked meats, tomatoes, and mushrooms.

Some people use plants to make bread, pasta, or juices. Others use oilseeds, like sunflower or sesame, to make rich oils. We also use fungi and bacteria to make fermented foods. This is how we get tasty things like cheese, yogurt, and bread. Animals provide important proteins through meat, eggs, and dairy products. Some people choose to be vegetarians or vegans. These people choose not to eat certain animal products for many different reasons.

History shows how our eating habits have changed over time.

Long ago, humans secured food by hunting and gathering. Later, people began using agriculture to grow crops in one place. Today, much of our food comes from a large industrial food industry. This system uses intensive agriculture and complex ways to move food around. However, this system also uses a lot of fossil fuels. In fact, the food system is responsible for as much as 37 percent of total greenhouse gas emissions. This makes it a major part of the conversation about climate change.

Food is also a way for people to share their culture.

Different groups have their own cuisines, which are special sets of cooking traditions. These traditions use unique spices, herbs, and flavors. Because of international trade, ingredients from one part of the world can now be found everywhere. This creates a mix of different food traditions. Some famous types of ethnic foods include Italian, Japanese, Chinese, and Nepalese. Food can even be a way to communicate who we are. Many people say that food is the last part of a culture to be lost.
