There are many different kinds of crabs we can eat. These include the brown crab, the blue crab, and the blue swimming crab. Some people also eat the red swimming crab. Each kind of crab can taste a little bit different.

There are two main ways to look at crab meat. One way is by the color of the meat. White meat comes from the legs and the claws. It is flaky and has a very pleasant smell.

Brown meat is found under the crab's hard shell. This meat is softer and has a very rich flavor. It is also high in healthy omega-3 fatty acids. People use white meat for salads or pasta. They often use brown meat to make rich soups or sauces.

People use different ways to get the meat out. Handpicked meat is the highest grade of all. This means people use their hands to carefully take the meat out. This helps the meat keep its natural flavor.

Other meat is processed by machines. These machines use water or air to separate the meat from the shell. Some fisheries use a method called declawing. This is when one or both claws are removed from a live crab. The crab is then put back into the water. Some crabs can even grow a new claw after about a year.

In the United States, crab meat has many special grades. Colossal Lump is the largest piece of white meat. It comes from the big muscles near the swimming fins.

Lump is another grade with firm, whole pieces of white meat. There is also Broken Lump, which is a mix of pieces. Other grades include Back fin, Special, and Claw meat. Claw meat is darker and has a much stronger taste. These grades help chefs choose the best meat for their cooking.

Sometimes people eat imitation crab instead of real crab. This is also called surimi. It is a way to make seafood more affordable.

Most imitation crab is made from a fish called Alaska pollock. This fish is found in the Bering Sea near Alaska. The idea of surimi started over 800 years ago in Japan. People in Japan used it to make fish cakes called kamaboko. In 1975, people in Japan found a new way to make it look like crab. By 1983, companies in America began making it too.
