The blue crab is a famous sea creature. It is known by many names like the Atlantic blue crab or the Maryland blue crab. These crabs live in the western Atlantic Ocean and the Gulf of Mexico. They are very important for food and business in the United States. Many people catch them in places like Louisiana and the Chesapeake Bay.

In Maryland, they are even the official state crustacean. Because they are so popular, people have built large fisheries to catch them.

These crabs have a special way of growing. They grow by shedding their hard outer shell, which is called molting. When a crab molts, it exposes a new, larger shell underneath. This new shell starts soft, but it soon becomes rigid and hard. This hardening happens faster in water with low salt levels. A blue crab will molt about 25 times during its life.

Males usually molt about 20 times, while females molt about 18 times after they are larvae.

Scientists have studied these crabs for a long time to learn their secrets. In 2021, researchers at the University of Maryland finished a big project. They spent six years mapping the crab's genome, which is its complete set of DNA. This map helps experts understand how crabs react to warmer water. It also helps them see which crabs are best at having babies.

Knowing this helps protect the crabs as the ocean changes.

Blue crabs have many unique facts about their bodies. You can tell males and females apart by looking at their abdomen, or apron. The male's apron is long and thin like the Washington Monument. The female's apron is wide and round like the U.S. Capitol dome.

Their claws also have different colors. Males have blue claws with red tips. Females have orange claws with purple tips. Even their names tell a story. The name *Callinectes* comes from Greek words meaning "beautiful swimmer."

Watching a blue crab change can be quite surprising. Their shells look blue because of special pigments inside. One pigment is called alpha-crustacyanin, and it works with another called astaxanthin. This creates a greenish-blue color in the living crab. However, when you cook a blue crab, the blue pigment breaks down. This leaves only the red pigment behind.

This is why a blue crab turns a bright orange-red color when it is cooked. It is a wonderful example of how science works in our food.
