They often work in busy places like restaurants. While people sometimes call them chefs, the two words have different meanings in the food world. Cooks have many important jobs in a kitchen. Learning this craft has changed through many years of history. In medieval France, cooks were seen as trained craftsmen. A person named Taillevent wrote about training in a book called Le Viandier. He had to be an apprentice and a journeyman first. Later, Georges Auguste Escoffier described a cook as a Cuisinier. In Ming dynasty China, many cooks served the wealthy. They worked in inns or as street vendors. The royal court was a huge employer of cooks. In the 15th century, over 9,000 cooks worked for the court. They provided food and wine for up to 15,000 people every day.

In different parts of the world, cooking looks very different. In the Middle East, many cooks use lamb or chicken. They often serve meat with bread or rice. Because many people there cannot digest dairy easily, they do not use much milk. Eggplants are very popular and can be used in over 40 dishes. In Mexico, cooks use food to show their soul and heritage. They might buy ingredients at street markets. Some foods, like crepes, came from French influence. Making corn tortillas by hand can take a long time. It is a job that requires great passion.

To become a professional, many people go to special schools. These programs teach food safety and how to be hospitable. In the United States, these lessons can last two to four years. Some people choose an apprenticeship instead. This is a way to learn by doing the job for about one year. In the United Kingdom, students might earn a diploma in professional cookery. These training paths help people gain the skills they need. It is a way to turn a talent into a real career.

Working in a kitchen can be a very hard job. It is often loud, hot, and crowded. Cooks must move fast and work odd hours. They might work a "clopen," which means closing late and opening early. There are also safety risks in a kitchen. Cooks might touch hot surfaces or sharp tools. They may even slip on wet floors. Despite these hard parts, the job is respected. It requires fine skill and great finesse. In the United States, the number of cook jobs is expected to grow by 6 percent soon.
