While people used lard in the past, most people use oil today. This method is different from shallow frying in a pan. Deep frying is a hot-fat cooking method that works very fast. This happens because oil moves heat quickly to the food. The hot oil touches every side of the food at the same time. This makes the cooking process very efficient for many different treats.

To get the best results, cooks follow a specific way it works. They often add layers of coating like flour, cornmeal, or tempura batter.

These coatings help protect the food while it cooks. Some meats are even partially cooked before they go into the oil. This helps the inside stay juicy while the outside gets crispy. If the oil is hot enough, the food will not feel too greasy. The water inside the food turns into steam and pushes the oil away.
