Calcium acetate

physical science Maturity 11-13 Next article →

Calcium acetate is a specific chemical compound. It is a calcium salt of acetic acid. Scientists use the chemical formula $Ca(CH_3COO)_2$ to describe it. You might also hear it called calcium ethanoate. This is its systematic name used in formal science. An older name for this substance is acetate of lime. It is an important tool in medicine, food science, and chemistry education.

Understanding how this salt forms requires looking at its ingredients. You can prepare calcium acetate by soaking calcium carbonate in vinegar. Calcium carbonate is a common substance found in nature. It is found in eggshells and in rocks like limestone or marble. You can also use hydrated lime to create the compound. This process involves a reaction between the calcium source and the acetic acid. Because vinegar and calcium carbonate were available in pre-historic times, people likely observed these crystals long ago.

The physical state of the compound is very specific. The anhydrous form, which means it has no water, is very hygroscopic. This means it pulls moisture from the air very easily. Because of this, the monohydrate form is much more common. A monohydrate holds one water molecule within its structure. This makes the substance more stable for use.

Calcium acetate plays a vital role in human medicine. It is used to treat people with kidney disease. In these patients, blood levels of phosphate can rise too high. This condition is called hyperphosphatemia. High phosphate levels can lead to serious bone problems. Calcium acetate works by binding to the phosphate found in a person's diet. By binding to it, the salt helps lower the phosphate levels in the blood.

This compound is also a common food additive. It is known by the number E263 in food labeling. In the food industry, it serves several functions. It can act as a stabilizer, a buffer, or a sequestrant. You will often find it used in various candy products. It is also used in the traditional production of tofu. Tofu is made by coagulating soy milk. While some use calcium sulfate, calcium acetate is often a better alternative. Because it is soluble, it dissolves easily in liquid. This means it requires less skill and a smaller amount to work.

In the history of industrial chemistry, calcium acetate was very important. Before the development of the cumene process, it was a common starting material. Scientists used it to synthesize acetone. It was a popular choice for this because it was quite inexpensive. This helped drive the production of other chemicals before newer methods were invented.

Chemistry teachers often use calcium acetate to demonstrate interesting reactions. They can create a substance known as "California Snowballs." This is made by mixing a calcium acetate solution with ethanol. The mixture forms a whitish, semisolid gel. This gel looks very much like a real snowball. The gel is also flammable. If you light it, the snowball will burn for approximately 20 minutes. This experiment shows how a saturated solution can change its physical state.
