Beetroot

life science Maturity 5-7 Next article →

Beetroot is a colorful plant with a large taproot. A taproot is a main root that grows deep into the ground.

This plant belongs to a group called Conditiva. People call it many names like table beet or garden beet. You can find red beets or golden beets in the garden. The green leaves are also edible and are called beet greens.

Beetroot is a very useful vegetable for many reasons.

Growing beetroot involves a few interesting steps. First, the plant grows from a seed. It takes about 55 to 65 days to grow the root.

You can harvest the green leaves much earlier than the root. The plant picks up nitrates from the soil as it grows. These nitrates can help lower blood pressure in people. However, too many nitrates can be a health risk. Some tiny bacteria called Paracoccus denitrificans can help break them down.

People have grown beetroot for a very long time. It was first domesticated in the ancient Middle East. The Ancient Egyptians, Greeks, and Romans all grew it. They mostly grew it to eat the green leaves. Later, the Romans began to grow it for the roots too. In the Middle Ages, people used it to help with digestion. In the 17th century, people even used the juice to color wine.

Beetroot is found in many different parts of the world. It is native to the Azores, India, and parts of Europe. In Eastern Europe, people love beetroot soup called borscht. In Ukraine, they make a thick stew called shpundra. In Australia and New Zealand, people put pickled beets in hamburgers.

In India, cooked beetroot is a common side dish. Even in Sweden, people add chopped beets to meat dishes.

There are many ways to enjoy this vegetable today. You can eat the deep purple roots raw in a salad. You can also roast, steam, or boil them. Some people like them pickled or served in a sweet sauce. The red color comes from a compound called betanin. This is a type of pigment used to color foods like candy.

Sometimes, the red color can make your urine look red. This is called beeturia, and it is perfectly harmless.
