Beetroot is a plant with a big, colorful root.

People call it a root vegetable. You can eat the deep purple root in many ways. You might eat it raw in a salad. You can also roast, steam, or boil it. Some people even eat the green leaves. These leaves are called beet greens. They taste a lot like spinach.

Beetroot grows in many places. It is native to Europe and India. Many people use the juice to color food. It contains betanin, a red color. This helps make things like jam and candy look bright red.

Beetroot is also very healthy. It has a lot of water and some power for your body. It has folate, which is a type of nutrient. Eating it can help lower blood pressure. Sometimes, the red color can change the look of your urine. This is called beeturia. It might look like blood, but it is harmless. It just means the color is passing through you.
