While we usually see them as orange, they actually come in many colors like purple, black, red, white, and yellow. These different colors come from heirloom varieties of the plant. All these carrots are domesticated versions of the wild carrot. The wild carrot is native to Europe and Southwestern Asia. Most carrots are grown as a taproot, which is the main part of the plant underground.

Carrots follow a special two-year life cycle called a biennial plant. In the first year, the plant focuses on growth. It stores energy in its large taproot to use later. This energy helps the plant grow tall flowers during its second year.

The taproot has an outer layer called the cortex and an inner core called the xylem. High-quality carrots often have a very large cortex. As the plant grows, it develops a stem just above the ground. This stem eventually grows into a large, branched cluster of flowers.

People have been growing carrots for a very long time. Early farmers actually grew them for their leaves and seeds instead of their roots. Carrot seeds have been found in places like Switzerland and Germany from 2000 to 3000 BC. In the 6th century, a book called the Juliana Anicia Codex showed that the root could be cooked and eaten.

Later, the modern orange carrot became popular. Dutch growers likely created this variety in the early 18th century. Some think they did this to honor the Dutch flag or the House of Orange.

Growing carrots requires the right environment to be successful. They grow best in full sun and prefer temperatures around 15 to 20 degrees Celsius. Farmers need deep, loose, and sandy soil so the roots can grow straight. If the soil is too rocky, the roots might become hairy or misshapen.

There is a famous story that eating carrots helps you see in the dark. This was actually used as propaganda during the Second World War. It was meant to explain why British pilots could fight well at night. The real reason they could see was because of a new technology called radar.
