Baking is a special way to cook food using dry heat.

Most people use an oven to do this. You can also bake food in hot ashes or on hot stones. As the food heats up, the warmth moves from the surface to the center. This usually happens at temperatures higher than 300 °F. This heat makes the outside brown and tasty through caramelization. It also turns soft doughs into goods with a firm crust and a soft middle.

Many different foods can be baked. People call these items baked goods. This includes bread, cakes, cookies, and pastries. You can also bake savory things like quiches, scones, and crackers. Some people even bake meat, such as meatloaf or ham.

There are clever ways to protect food from getting too much direct heat. One way is called en croûte, which means "in crust." This wraps meat or vegetables in pastry to keep the juices inside. Another way is en papillote, which means "in parchment." This uses paper or foil to wrap the food while it cooks.

Baking has a very long history. The earliest baking happened when humans mashed wild grains with water into a paste. They cooked this paste on flat, hot rocks. Later, people used fire to roast the paste on hot embers.

Ancient Egyptians are said to have invented the first ovens. They also used yeast to make bread. Archaeological digs in places like Turkey and Palestine show ovens dating back to 5600 BC. By 2600 BCE, Egyptians were making bread much like we do today.

In the Roman Empire, baking became a very important job. Around 300 BC, pastry cooks became a respected profession. These cooks were called pastillarium. Romans loved big feasts and celebrations. They prized cooks who could invent new, tasty treats.

By 1 AD, there were more than 300 pastry chefs in Rome. They made many types of food, like libum cakes and spira pretzels. Rome even had a bakers' guild called the Collegium Pistorum in 168 BC. They used mills to grind grain into flour for their ovens.

Today, baking happens in many different places. You can find baked goods at home, in bakeries, or at farmers' markets. Some baking is done in large factories using big machines.

In the United States, the baking industry uses many old techniques. Even big restaurants like The Ritz London bake their own scones. They bake them in the afternoon to make sure they are fresh. Freshness is very important because the smell and taste are best right after baking.
