It comes from the seeds and pods of certain plants. These plants belong to the ginger family. They grow in swampy areas along the coast. People use this spice to add heat and a strong smell to food. It is a very important part of West African cooking.

Many people call it by different names. For example, the Yoruba people call it atare. In the Bini language, it is known as ehien-edo. In the Efik and Ibibio languages, it is called ntuen ibok.

The way the spice looks is very interesting. The plants produce small pods that hold seeds inside. When the pod opens, you can see the seeds. These seeds have a papery skin over them. This skin has bumps on it. These bumps look like the back of an alligator. This is how the spice got its English name. Sometimes the seeds are sold alone as mbongo spice. This happens when the outer skin is removed from the grains.

Cooking with alligator pepper requires a careful touch. It is an expensive spice in West Africa. Because of the cost, people use it sparingly. One way to use it is to pound a whole pod. You can use a pestle and mortar to do this. Then, you might add only half a pod to a dish. It goes well in boiled rice or stews. It can also replace grains of paradise or black cardamom. It provides a hotter and more pungent flavor.

This spice is part of many important traditions. In Yoruba culture, it is used when a baby is born. The tiny new baby gets a small taste of the spice. It is also used at traditional meet-and-greet events. In Igboland, people use it during naming ceremonies. They often serve it alongside kola nuts. It is a central part of social events there. It is even used in Ibibio ceremonies.

Alligator pepper connects people to their history and community. In many Igbo ceremonies, it is the very first thing shown. Guests receive the spice and kola nuts at the top of the agenda. This happens before any other food or fun. People even use them during prayers and libations. The spice has also been used for medicinal purposes. For example, it was used in medicine during the COVID-19 pandemic.
