People grow small, tender types to eat as food. Larger types are often grown to feed livestock on farms. Most turnips have white skin on the bottom. The top part might turn purple, red, or green when it sees sunlight. This colorful top part grows from stem tissue. Inside, the flesh is always bright white.

Growing a turnip takes a bit of planning. They grow best in cool weather. If the weather gets too hot, the roots can become woody and taste bad. Farmers often plant them in the spring in places like Canada. They usually take about 55 to 60 days to be ready for harvest. A turnip is a biennial plant, which means it has a two-year life cycle. In the first year, the plant grows a big root to store nutrients. In the second year, it grows tall yellow flowers and makes seeds in small pods.

Turnips have a very long history. Wild versions of these plants grew in Europe and western Asia. Scientists believe edible turnips were first grown in Central Asia thousands of years ago. This is because the plants there have many different types of genes. Later, farmers in Europe and East Asia grew them for their large leaves. Turnips became a very important food in the Roman world. They even reached Japan by the year 700 CE.

In the United States, turnips were a staple food in the old South.

People grew them for both the roots and the green leaves. The leaves can be ready to eat just a few weeks after planting. In the South, people often boiled the greens with salt pork. They called the tasty broth "pot likker." This broth was served with corn bread made from coarse meal. This made the turnip a very helpful food for new settlers.

Turnips are part of a big family of plants. This family includes mustard and radishes. Some turnip leaves even look like bok choy or Chinese cabbage. In England, a man named Charles Townshend used turnips to help farmers rotate their crops. This helped animals have food all year long. In Austria, people even make a strong drink called Krautinger from a type of turnip. This drink is famous for having a very distinct smell and taste.
