They are often found in bark and fruit. One type is called tannic acid.

Tannins can change how things feel. If you drink tea or eat unripe fruit, your mouth may feel dry. This is called astringency. This feeling happens because tannins bind to proteins. They can even turn animal hides into leather. Long ago, people used oak bark for this job.

Plants use tannins to stay safe. They can act like pesticides to stop animals from eating them. They also help control how a plant grows. In some plants, tannins are kept in tiny storage spots. These spots are called vacuoles.

Tannins can also change the world around them. When leaves fall into a stream, tannins can leak out. This can make the water look brown, like tea. This can even stain the feathers of white swans. In some forests, tannins help control how old leaves decay in the soil. This helps the whole forest stay healthy.
