Some people also eat the young leaves and shoots as green vegetables. While it looks like a regular potato, the two are only distantly related.

Growing a sweet potato involves a few interesting steps. The plant grows as a vine that crawls along the ground.

It uses stems or root cuttings to grow new plants. This is called propagation. The plant likes warm nights and plenty of sunshine. It does not like frost or too much water in the soil. The roots take anywhere from two to nine months to fully mature.

As the plant grows, the tubers store energy inside them.

History tells us that sweet potatoes come from South America. They likely started in the area we now call Ecuador.

People in Central America were growing them at least 5,000 years ago. Some of the oldest remains were found in caves in Peru. These remains are about 8,080 years old. Scientists believe the plant evolved through natural changes over many thousands of years. It might even be the first naturally transgenic food crop. This means its DNA changed in a special way through nature.

There are many different kinds of sweet potatoes to find.

The skin can be yellow, orange, red, brown, purple, or beige. Inside, the flesh can be white, red, pink, violet, or orange. Red or orange flesh is often more moist and sweet than white flesh. In North America, some people call darker sweet potatoes "yams." However, they are not the same as true botanical yams. True yams belong to a completely different group of plants.

Sweet potatoes have traveled all over the globe.

They arrived in Europe during the Columbian exchange. They were also brought to the Philippines by Spanish ships. In Japan, they became a very important food to prevent hunger. Even in Polynesia, sweet potatoes were grown long ago. Some people think travelers moved them between South America and the Pacific islands. Today, you can find them in many different dishes around the world.
