People use this oil in many ways every day. It is a common ingredient for frying food in the kitchen. It can also be used in cosmetics to help skin. The oil has a very neutral taste. This means it does not change the flavor of your food. It is also a rich source of vitamin E.

There are two main ways to get the oil from the seeds. One way is called expeller pressing. This happens when seeds are crushed to squeeze the oil out. This can be done as cold-pressing at low temperatures. Another way uses chemical solvents to pull the oil out. This second way is often used for refining. Refining makes the oil more stable for high heat cooking.

Humans have used sunflowers for a very long time. Native Americans used oil from the seeds after they domesticated the plant around 3000 BC. In more recent history, people first used sunflower oil in food in Russia. Today, it is a huge part of the world food supply. In 2022, the world produced 20.3 million tonnes of this oil. Russia and Ukraine produced 55% of that total amount.

Scientists can change the oil by changing its fats. The oil is mostly made of oleic acid and linoleic acid. These are types of fats called monounsaturated and polyunsaturated fats. Different kinds of oil are made through plant breeding. For example, high-oleic oil has 82% oleic acid. Conventional high-linoleic oil has 69% linoleic acid. There is also mid-oleic oil with 65% oleic acid. A special type has 18% stearic acid and 72% oleic acid.

Sunflower oil is much more than just a cooking ingredient. The leftover crushed seeds are called seed meal. This meal is used as animal feed or fertilizer. The oil can even be used as fuel for diesel engines. In the European Union, it can be sprayed on tomato crops. This helps control a fungus called powdery mildew. It is even used in some cosmetic products.
