Cottonseed oil is a cooking oil made from the seeds of cotton plants.

Most of these plants, like Gossypium hirsutum, are grown for their soft fiber. However, the seeds also contain an oil-bearing kernel inside a hard outer hull. This oil is very useful because it has a mild taste. It is also very stable, which means it does not change easily. Because of this, people use it in salad dressings, mayonnaise, and many fried snacks.

To make the oil, workers must first get the kernel out of the shell. This is often done through a method called solvent extraction. Once the oil is out, it must go through refining to make it safe to eat. There is a natural substance in the seed called gossypol that can be toxic. Refining, bleaching, and deodorization are three steps used to remove it. Some workers even use ferric chloride to help remove color. These steps ensure the oil is a safe, food-grade product for families.

In the past, cottonseed was often seen as something worthless. Before the late 1800s, many people just let the seeds rot or dumped them in rivers. This changed in 1857 when William Fee patented a machine called a huller. This invention could finally separate the tough hulls from the seed meat. At first, people used the oil to light lamps. They needed it because other oils, like whale oil, were becoming very expensive.

As time went on, the use for the oil changed again. A company named Procter & Gamble used the oil to make a product called Crisco.

They used a process called hydrogenation to make it act like animal fat. By 1911, they used big marketing campaigns to teach people how to use it. This helped cottonseed oil become a main cooking oil in the United States. In 2019, the world produced about 4.45 million tonnes of this oil. China and India are the leaders, making up 56% of that total.

Today, cottonseed oil is still a part of our world. It is used in many packaged goods because it helps them stay fresh on shelves. While some people avoid certain types of processed oils, others say it can be a healthy choice. It is different from other oils like soybean oil or olive oil. Even though it has had many different uses, it remains a key part of food science. It shows how a leftover part of a plant can become something very important.
