This method uses a special pan called a wok. You cook ingredients in a small amount of very hot oil. While the food cooks, you must stir or toss it quickly. People love this method because it is very speedy. You can prepare a whole meal in just fifteen minutes. It is a great way to make meats and vegetables taste delicious.

There are two main ways to stir fry. The first way is called chao. In chao, you add a liquid to the pan. This makes the ingredients feel softer when they are done. The second way is called bao. This technique uses very high heat and continuous tossing. Bao makes the food much more crispy.

To do this, the wok is heated until it has a dull red glow. Chefs often coat meat in egg white or starch to keep the juices inside. This helps the food stay tasty and bright.

Some cooks talk about a special feeling called wok hei. This phrase is Cantonese for "wok thermal radiation." Many people call it the "breath of the wok."

It describes a unique flavor and aroma. This happens when the food hits a very hot metal wok. The heat causes a special reaction in the oil and food. This gives the dish a concentrated taste and a wonderful smell. It is a very important part of Cantonese cooking.

This cooking style began a long time ago in China. Wok frying might have started as early as the Han dynasty. At first, people used woks to dry grain instead of cooking food. By the Song dynasty, people were using vegetable oil for frying. The modern shape of the wok became popular during the Ming dynasty.

In the late Ming period, stir frying became even more popular. It helped people save money on fuel like wood and charcoal. This is because the high heat cooks food very quickly.

Stir frying is also a very interesting way to keep nutrients in food. Cooking with high heat can help keep the color and texture of vegetables. For example, one study found that stir frying preserved more vitamin C in bamboo shoots than boiling. However, adding oil does increase the fat content of the dish. Different oils can also change how many nutrients stay in the food. Using extra virgin olive oil can keep vitamin C levels very high. It is a smart way to cook many different types of food.
