Sodium bicarbonate is a white, crystalline solid that often looks like a fine powder.

It is a chemical compound with the formula NaHCO3. You might know it by many names. In the United States, people usually call it baking soda. In the United Kingdom, Australia, and New Zealand, it is often called bicarbonate of soda. It has a slightly salty and alkaline taste. This taste is similar to sodium carbonate, which is also known as washing soda. It can be found in nature as the mineral nahcolite or as part of the mineral trona.

This powder works in many ways by reacting with other things. In baking, it acts as a leavening agent to make food rise. When sodium bicarbonate meets an acid, it releases carbon dioxide gas. Common acids used in cooking include vinegar, citric acid, and cream of tartar. This gas creates bubbles that expand the batter. This process gives cakes and breads a light texture. Heat can also cause the powder to release gas through thermal decomposition. However, using only heat without an acid can leave a bitter, soapy taste in your food.

Many people use baking powder instead of plain baking soda for cooking. Baking powder is a mixture that contains about 30% bicarbonate. It also includes acidic ingredients like calcium acid phosphate or cream of tartar. This mixture is very handy because it only needs water to start working. The acid in the powder helps prevent a metallic taste during baking. This makes it a reliable tool for making quick breads and other treats.

Beyond the kitchen, this substance has many important uses. It can be used to put out small grease or electrical fires. When thrown on a fire, it releases carbon dioxide and water to help smother the flames. In science labs, it is used to neutralize acid spills. It is also used in medicine to treat heartburn or acid indigestion. Doctors sometimes use it in hospitals to help treat certain types of overdose or blood issues. It can even be used in mouthwash to help clean teeth and gums.

Sodium bicarbonate is also a helpful tool for cleaning and home care. It can be used in a process called sodablasting to remove paint from soft materials like wood or copper. A paste made from the powder can even help remove rust from metal. Some people keep an open box in their refrigerator to absorb smells. This idea became very popular after an advertising campaign by Arm & Hammer in 1972. Today, it remains a common item found in many homes and stores around the world.
