Ammonium bicarbonate is a colorless, solid compound. It is a salt made from the ammonium ion and bicarbonate. This substance is very interesting because it breaks down easily. When it breaks down, it turns into water, carbon dioxide, and ammonia. This way of breaking down is called decomposition. It is used in many different ways in our world. It helps make things in food, science, and even medicine.

Making this substance involves a specific way of working. First, people combine carbon dioxide and ammonia. This reaction must stay very cold. If it gets too warm, the solid will not form correctly. Keeping it cold allows the product to fall out as a white solid. This process is called precipitation. In 1997, about 100,000 tons of this substance were produced this way.

In the past, people knew this substance by different names. It was often called sal volatile or salt of hartshorn. People used to make it by heating organic things like hair, leather, or horns. This method is called dry distillation. In many places, it has special names. In Germany, it is called Hirschhornsalz. In Sweden, it is called hjorthornssalt. These names all link back to the idea of using animal horns.

This powder is very useful in the food industry. It acts as a leavening agent, which means it helps food rise. It is great for flat foods like crackers or cookies. It is better than baking soda for some recipes. It produces more gas and leaves no salty or soapy taste. This happens because the substance turns into gas and evaporates during baking. However, it should not be used for thick cakes or bread. If used in moist foods, the ammonia might get trapped inside.

Science uses ammonium bicarbonate for many important jobs. It is used to make plastics, rubber, and dyes. It is also a source of ammonia for fertilizers. In labs, it helps keep solutions at a steady level. This is called a buffering agent. It is very helpful in machines that study tiny particles. It can even be found in some cough syrups. In nature, it is very rare and only found in a mineral called teschemacherite.
