physical science Maturity 5-7 Next article →

Sodium benzoate is a white crystalline chemical. It is also known as benzoate of soda. This substance is a salt of benzoic acid. People use it as a food preservative to keep things fresh. It is also used as a pickling agent. Many foods contain benzoic acid naturally. You can find it in berries like cranberries or bilberries. It is also found in seafood like prawns and in dairy products.

This preservative works in a very specific way. It works best in foods that are acidic. You might find it in salad dressings or carbonated drinks. It is also used in jams, fruit juices, and pickles. The process starts when benzoic acid enters a tiny cell. If the acid level inside the cell drops to 5 or lower, it stops a process called anaerobic fermentation. This stops the growth of tiny organisms. These organisms are the ones that cause food to spoil.

Learning about food safety has a long history. In the 19th century, a man named Harvey W. Wiley studied sodium benzoate. He worked with a group called the 'Poison Squad' for the US Department of Agriculture. His work helped lead to the 1906 Pure Food and Drug Act. This was a very important event for food rules in the United States. Today, the FDA says sodium benzoate is generally recognized as safe. In the U.S., the FDA limits it to 0.1% by weight in food.

Sodium benzoate has many different uses in science and medicine. It can be used in medicines to treat urea cycle disorders. It helps by binding to amino acids. This helps the body get rid of ammonia. It is also used in fireworks. It acts as a fuel in a whistle mix. This special powder makes a whistling noise when it is ignited. In the United Kingdom, most soft drinks now use potassium sorbate instead of sodium benzoate.

Our bodies know how to handle this chemical quickly. We turn it into a substance called hippuric acid. This happens through a path called a metabolic pathway. First, an enzyme called butyrate-CoA ligase turns it into benzoyl-CoA. Then, another enzyme called glycine N-acyltransferase turns it into hippuric acid. Finally, the body excretes it. Scientists have also studied if it affects children. Some studies looked at hyperactive behavior when it was paired with certain food colors.
