It is a very important ingredient for many different meals. Most semolina is made from a hard wheat called durum wheat. This specific wheat gives the flour a pale yellow color. It is special because it has a lot of protein and gluten. Gluten is a part of wheat that helps dough stay firm. This makes semolina great for making chewy pizza crusts and pasta.

Modern mills use grooved steel rollers to turn wheat into flour. The rollers are set so they are slightly narrower than the wheat kernels. As the wheat goes through, the rollers flake off the bran and the germ. This process cracks the starch, which is also called the endosperm, into coarse pieces. The semolina is the part of the endosperm that stays in larger pieces. After sifting, these particles are separated from the bran and then ground into flour.

People have used words for semolina for a very long time. The word itself has been used since around 1790 or 1800. It comes from the Italian word "semola." This word changed from the Latin word "simila." The Latin word actually comes from an even older Semitic root. In those ancient languages, the word meant "flour." This shows how long humans have been using these grains to make food.

There are different kinds of semolina depending on the wheat used.

In North Africa, it is used to make the staple food called couscous. Common wheat semolina is beige and is often called farina in the United States. In India, it is called sooji or rava and is used for many things.

Semolina is also famous for making wonderful sweet treats. In the Middle East, people make a cake called basbousa. This cake is soaked in sweet syrup and often has nuts on top. In Sweden, semolina is boiled with berry juice and whipped until it is light and airy.
