Gluten is a special kind of protein found in certain grains.

It is a structural protein, which means it helps give things their shape. Most people know gluten from eating bread or pasta. It is found in all types of wheat, like durum and spelt. It is also in barley and rye. Some types of oats have it too. Even hybrid grains like triticale contain gluten. This protein is very important to the food industry because it is useful and does not cost much to produce.

When you make dough, gluten does a very important job. It forms when you mix flour with water and knead it.

This creates a stretchy network of proteins called glutenin and gliadin. As you knead, these proteins link together. If you add yeast, the dough makes bubbles of gas. The gluten network traps these bubbles, which helps the bread rise. When you bake the bread, the gluten and starch harden to keep the shape. This process is why some breads are chewy and others are soft.

Different foods need different amounts of gluten to feel right. If a baker wants chewy food like bagels or pizza, they use flour with a lot of gluten. If they want tender food like pastries, they use flour with less gluten. Bakers can even measure this strength using a tool called a farinograph. In big factories, machines make pure gluten by kneading flour under water. They wash away the starch and dry the gluten into a fine powder. This powder can be added to other doughs to make them rise more or become more stable.

Gluten is used for many things besides bread. It is often used to make imitation meats, which are foods that look like meat for vegetarians.

This is sometimes called seitan. It can be made to look like duck, beef, or even pork. When it is cooked in broth, it soaks up flavor and becomes firm. Gluten is also found in things like soy sauce, beer, and even ketchup. It is even used in some cosmetics and pet foods to add extra protein.

For some people, gluten can cause health problems. This is called a gluten-related disorder. One common type is celiac disease, which affects about 1 to 2 percent of people.

In people with this disease, the body's immune system reacts to gluten. This reaction can hurt the small intestine and damage the tiny parts called villi. Other people might have gluten sensitivity or wheat allergies. To stay healthy, people with these conditions must follow a gluten-free diet. This means they avoid grains like wheat, barley, and rye.
