Rendang is a rich, dry meat dish that is popular throughout Southeast Asia.

It is widely enjoyed in Brunei, Indonesia, Malaysia, Singapore, and the Philippines. While many people call it a dry curry, the name actually describes a specific cooking method. In the Minangkabau language, the term *marandang* means to cook food slowly until it becomes dry. This process transforms meat into a flavorful dish with a thick, dark glaze. Because it is cooked until the liquid evaporates, rendang can last for a very long time.

This long shelf life made it a perfect provision for travelers and traders.

The cooking mechanism is a slow, transformative process. First, meat is placed in an uncovered pot or pan with coconut milk and a spice paste called *rempah*. The mixture is simmered slowly over heat. As the liquid reduces, the coconut milk begins to break down. Eventually, the oil separates from the solids. At this stage, the meat begins to fry in its own infused oil and sauce. This frying step coats every piece of meat in a heavy, concentrated glaze. This method is different from *goreng*, which usually involves frying in a large amount of oil. In rendang, the meat fries in its own concentrated fats.

There are various types of rendang that reflect different ingredients and regional styles. One version is *rendang santan*, which specifically emphasizes the use of coconut milk. Another is *rendang pedas*, a version known for being particularly spicy. In the Minangkabau tradition, it is known as *samba randang*. The Moro people in the Philippines have their own version called *riyandang*.

These variations show how the dish has adapted to different local tastes. While the core technique remains the same, the specific spice blends can change. This allows each culture to claim the dish as part of its unique local cuisine.

The history of rendang is a story of cultural exchange at the Malacca Strait. The dish has strong roots in Malay and Minangkabau cultures. It likely carries heavy Indian influences because many of its ingredients are staples in Indian cooking. Spices like cardamom, coriander, garlic, ginger, galangal, lemongrass, and turmeric are all common to both.

The Portuguese also changed the dish after capturing Malacca in 1511. They introduced chili peppers to the region through the Columbian exchange. Some historians also suggest that Portuguese methods of frying meat after braising might have influenced the technique. This mix of Indian spices and Portuguese ingredients helped shape the modern dish.

Historical records provide many details about the long existence of rendang. The earliest reference appears in the 16th-century Malay manuscript *Hikayat Amir Hamzah*. By 1623, a Dutch-Malay dictionary defined the term as frying in oil or butter.

In the 1800s, British colonial officials in Malaya noted that Malays distinguished between dry and wet curries. Rendang was clearly the dry version. The dish was even served at royal banquets. In 1873, Sultan Abu Bakar of Johor served *rendang tenggiri* to guests. Even King David Kalākaua of Hawaii tried the dish during a visit in 1881.

Today, rendang holds great significance for the nations of Southeast Asia. It is a signature dish for Muslim communities and is served at festive gatherings. It is a central part of celebrations like wedding feasts and *Hari Raya*.

In the 20th century, Minangkabau migrants helped spread the dish as they settled in new areas. This helped make it a staple in many different regions. In 2009, Malaysia officially recognized rendang as a heritage food. Indonesia followed by granting it cultural heritage status in 2013. In 2018, Indonesia officially declared it one of its national dishes.

Modern rendang is found everywhere from local food stalls to international restaurants.

In Malaysia and Singapore, it is often paired with *nasi lemak* or *lemang*. *Lemang* is glutinous rice cooked in bamboo. Some modern recipes even use curry powder or serve the meat with spaghetti.
